ZESTY POTATO SALAD
184 MG SODIUM PER SERVING

INGREDIENTS:
1 LB SMALL RED POTATOES CUT INTO BITE-SIZED PIECES
1 SM RED ONION- SLICED THIN
6 TBSP BALSAMIC VINEGAR
1 TBSP LEMON
1/4 TSP BLACK PEPPER
6 TBSP EXTRA VIRGIN OLIVE OIL
1 TBSP OREGANO
2 TBSP PARSLEY

Boil potatoes in large pot with water covered about 15 min.
Then uncover potatoes and return to boil for another 15 minutes or until fork tender.
Drain potatoes and cut into bite-sized pieces then place into large bowl. Cut red onion
into thin slices and place in same bowl with warm red potatoes. In a smaller bowl
blend together vinegar, blk pepper, lemon and oil. Whisk continuously until blended.
Then stir in oregano. Pour dressing over warm potatoes and onions and
stir gently, Then sprinkle parsley over top. Cover and refrigerate until ready to serve.

Welcome to Cookie’s  Healthy Delectable Delites

Cookie – that’s her real name – has an inspirational story to tell, which could benefit some of you out there in cyberspace.   Perhaps one day she’ll tell it in detail in her new column. But,  in short, Cookie was given – to be blunt – a death sentence four years ago. Her liver had shut down, which, in turn, did a number on the rest of her body. With the help of a very caring husband, and  unusual self-determination, Cookie literally returned to the living, shocking doctors by bringing her vital signs back to near normal. The only thing, besides sheer determination this could be attributed to is her diet. Cookie cut out salt  and fried food from her diet, while finding healthy substitutes.   Perhaps  Cookie’s doctors should take a lesson  - or recipe or two – from  Cookie to give to their other patients in similar situations as Cookie was in.   But that’s only a fraction of her story. Week 1 LOW SODIUM POTATO BURRITO

3 white Baker potatoes

1 Tbsp extra virgin olive oil

1 Tsp dried thyme

1 Tsp dried marjoram

3 medium spanish onions

8 oz frozen roasted corn

1 cup Low sodium cheddar cheese shredded

1 Tbsp unsalted butter

1/4 to 1/2 cup half n half

4 burrito sized flour tortillas   100 mg or less–Clarks Organic

Daisy sour creme (optional for topping)

low sodium salsa  Peach is low sodium– clarks organic

Cholula hot sauce   low sodium

Small or medium sized baking dish or foil baking pan

Pre-heat oven to 350″

Boil potatoes on med. heat in large saucepan until fork tender 15 to 30 minutes.

Drain potatoes.

In large skillet heat oil and dried ingredients for 2 minutes on low heat.

Add roasted corn and saute for 15 minutes.

In medium bowl add potatoes and corn mixture, butter and half n half.  Mix until smooth with potato masher.

Warm tortillas in oven wrapped in foil for 1 to 2 minutes.

In small or medium square baking dish or foil baking pan place tortilla and add potato mixture and dollop of sour creme if desired roll tortillas oblong and place side by side.

Sprinkle with cheddar cheese and salsa and bake in 350 degree oven for 20 to 30 minutes or until golden brown.

Remove from the oven and top with remaing salsa as desired.
