ZESTY POTATO SALAD
184 MG SODIUM PER SERVINGINGREDIENTS:
1 LB SMALL RED POTATOES CUT INTO BITE-SIZED PIECES
1 SM RED ONION- SLICED THIN
6 TBSP BALSAMIC VINEGAR
1 TBSP LEMON
1/4 TSP BLACK PEPPER
6 TBSP EXTRA VIRGIN OLIVE OIL
1 TBSP OREGANO
2 TBSP PARSLEYBoil potatoes in large pot with water covered about 15 min.
Then uncover potatoes and return to boil for another 15 minutes or until fork tender.
Drain potatoes and cut into bite-sized pieces then place into large bowl. Cut red onion
into thin slices and place in same bowl with warm red potatoes. In a smaller bowl
blend together vinegar, blk pepper, lemon and oil. Whisk continuously until blended.
Then stir in oregano. Pour dressing over warm potatoes and onions and
stir gently, Then sprinkle parsley over top. Cover and refrigerate until ready to serve.
